
A common question when visitors enter our
tasting room is "where is the wine made? The answer is behind the
tasting room in our custom built micro-winery.
Micro to us means small batches of hand crafted fines wines from our
vineyard,
a vineyard in the Finger Lakes, and a vineyard on Long Island. By utilizing
these three distinctly different vineyard climates, all within New York
State, we
are able to deliver a comprehensive selection of wines to suit all
tastes.
Our winemaking process is fairly simple. We use only the best quality
fruit,
carefully hand crushed and de-stemmed, then gently pressed in our
small
bladder press. From there the wines ferment and mature in our small
tanks
directly behind the tasting room. Our mountaintop winter chill takes
care of the process of cold stabilization. When the time is right, the
wines are sent to
our small gravity fed bottle filler, bottled, labeled and capped. From
there it is
a very short journey of just a few feet to the tasting room shelves, and
onwards to our customers and their dinner tables. We believe this
minimal movement of
product makes all the difference when it comes to capturing the essence
of purely made local wine.
